SALAD
1 box linguine noodles cooked, rinsed, cooled
1/2-1 head napa cabbage
1/2-1 head purple cabbage
1/2-1 bag baby spinach
add some romaine if you like (I do)
1 red pepper sliced thin
1 yellow pepper sliced thin
1 orange pepper sliced thin if available
1 small bag bean sprouts (same as mung sprouts)
3 scallions sliced
3 cucumbers** I don't like cucumbers so I don't use
LOTS of cilantro, if you like if not don't add
1 can whole cashews lightly toasted in pan *i don't do this but they are good for protein*
DRESSING
juice of 1 lime
8 TBL olive oil
2-3 TBL sesame oil *i do 2.5*
8 TBL soysauce
1/3 cup brown sugar
3 TBL fresh ginger chopped *i use WAY less*
2 cloves chopped garlic
2 hot peppers (serrano) or jalapenos, chopped *optional*
cilantro to taste
Mix salad ingredients *you need a HUGE bowl* I just put the linguine on the plate and then sprinkle the veggies on top. Then pour dressing over top.
And if there are more than 4 adults you should double the dressing.
So so so good. and beautiful.
