Chicken Pot Pie
This little diddy caused quite a stir amongst my Mommy friends. Will my husband like it, will my kids eat it, etc.
It will not disappoint.
3-4 boneless chicken breasts cooked and chopped/shredded
1/3cup butter
1 cup chopped onions
1 cup chopped celery
1 small potato chopped into small bites
1/2-3/4 bag of your fave. frozen veggies
1/2 cup flour
1 tsp salt
1/4 tsp pepper
2 cup chicken broth
1 cup half and half (I use fat free)
1 refridgerated pie crust (you can find near the biscuits)
Melt butter; add onion and celery; simmer for 10mins over medium heat
sprinkle flour; add chicken broth; stir until smooth
add half and half; cook over medium; stir till thick and bubbly
add chicken, salt and pepper, veggies and potatoes.
pour into a lightly greased 11x7 casserole dish; sit aside
unfold pie crust, press out the crease, use 1 tsp flour to help you roll it out to fit the dish,
place over the mixture.
Fold under the extra dough and crimp the edges with your fingers.
Cut 2 slits in top of dough.
Bake at 400 for 30mins
*if edges brown too much cover them with foil.

Do you cook the potato first?
I was going to make this tonight, but James just called to see if we want to meet him at Backyard Burger-yum! Chicken pot pie is now on the menu for tomorrow night :)
